It uses short-wave radiation that hits the food directly.&#xA;By putting dedicated tubes on every layer, you can basically tell the oven exactly how much power each rack needs. If the middle rack is struggling, you just crank up the wattage there. No more guessing games or rotating trays halfway through the bake.&#xA;&lt;strong&gt;The gear under the hood&lt;/strong&gt;&#xA;We use tungsten filaments wrapped in high-purity quartz glass. Why? Because these things get hit with massive temperature swings, and cheap glass would just crack.&#xA;These tubes plug into a PID controller, which is a fancy way of saying you can tweak the heat for one specific layer without messing up the rest of the oven.&#xA;They&amp;rsquo;re also pretty slim. You can slide them into tight spots without losing room for your trays. And when a tube eventually burns out—because it&amp;rsquo;s a heating element, and they all do—you just snap in a new R7s replacement and you&amp;rsquo;re back in business.&#xA;&lt;strong&gt;A few things to keep in mind&lt;/strong&gt;&#xA;It&amp;rsquo;s not magic, and there are a couple of trade-offs.&#xA;Infrared is directional. If you&amp;rsquo;re &lt;a href=&#34;https://goldisgood.com&#34;&gt;cooking&lt;/a&gt; something with a weird shape, you might get a few hot spots. You&amp;rsquo;ll want to play around with the distance between the tube and your tray so you don&amp;rsquo;t accidentally scorch the top.&#xA;Also, these tubes run hot. Really hot. Make sure your oven&amp;rsquo;s outer insulation is up to the task, or the outside of the machine is going to feel like a radiator during a heavy shift.&lt;/p&gt;</description>
