
Getting Your Oven Temp Exactly Right with Infrared
If you’ve ever tried a high-stakes bake, you know that just setting a dial to 400°F isn’t enough. You need the heat to climb and drop exactly when you want it to. That’s why we use shortwave infrared (IR) bulbs. They let us do “step-wise” control—basically, we nudge the heat up or down in tiny, precise jumps to get that perfect crust and a crumb that actually looks right.
Why IR beats the old way
Most heating elements are just too bulky. They take forever to warm up and even longer to cool down. By the time the sensor realizes it’s too hot, you’ve already shot past your target temperature. IR bulbs are different. They turn electricity into heat almost instantly. When you hook these up to a high-speed PID controller and an SSR, you get a response time measured in seconds. You aren’t just flipping a switch; you’re pulsing the energy. It’s like tapping a brake pedal instead of slamming it. The result? A flat, steady temperature line with almost zero wiggle room.
The gear and the headaches
We use high-purity quartz glass for these bulbs so the IR light actually gets through. The filaments are built to handle being turned on and off constantly. But here’s the catch: all that rapid switching puts a lot of stress on the electrodes. If your wiring is a bit loose or your voltage is jumping around, those connection points will burn out way faster than they should. You’ve got to keep your power supply stable. A 220V system with a heavy-duty bulb pulls a lot of current. If your contactors aren’t built for high-frequency switching, they’ll literally weld themselves shut. Not a great day at the shop.
Making it work on the floor
When you’re wiring this into a bread oven, keep your sensors as close to the dough as possible. If they’re too far away, you’ll deal with lag. Also, use shielded cables for your thermocouples. IR lamps create a lot of electrical noise, and you don’t want that messing with your readings. Once it’s dialed in, you can hit a specific temp, hold it exactly where you want it, and then jump to the next stage. No drifting, no guessing. Just the heat you asked for.
