How it actually works
Inside these bulbs, a tungsten filament sits inside a quartz envelope. When the power hits, it targets the fats and water molecules in your food directly. The result? Your surface temperature jumps almost instantly. We built these for high power density because “almost” isn’t good enough when you’re running a high-volume kitchen. You don’t have time for “dead zones” in your workflow. You just want to flip a switch and start cooking.
The nitty-gritty of the build
We use halogen-filled quartz tubes. We did this because they last longer and let the IR radiation pass through without getting trapped in the glass. Plus, we used standard connectors, so if a bulb eventually burns out, you can just pop a new one in and get back to work. But a word of warning: this heat is intense. Because the energy is so concentrated, you have to be smart about where you put your sensors. If you aren’t careful, you’ll end up with hot spots. Also, make sure your wiring and housing are heavy-duty. These bulbs get hot—really hot—and your equipment needs to be able to handle that constant thermal stress without falling apart.
